Hi Patrick! I have news :)

I've tried many different things, new truenas instalation etc, but I've found an issue.

I don't know why I cannot see all folders using windows explorer, but using winscp I have access to all!

I don't know is it bug or feature but if it's possible better for me will be access to all folders using windows.

No idea, sorry. I am not a Samba specialist. I would not touch a backup system with file sharing ever. It exists to do a restore to the production system in case that is necessary.
